Michelle's Meals on a Budget
Chicken and Yellow Rice

Ingredients:
1 whole chicken
Chicken bouillon cube (for extra flavoring if desired)
1 package of Yellow Rice, large or small, depending on how
many servings you need
Directions:
* Clean chicken and remove giblets. Place cleaned
chicken into a large pot of water (with a chicken bouillon cube if desired), and
boil until done.
* Remove skin and bones from the cooked chicken, and tear or
cut meat into bite-sized pieces.
* Prepare yellow rice as per instructions on the package.
* Add cut up chicken pieces to the cooked rice and serve warm.
~ Reader's Tip ~
I also make this using sausage instead of chicken and adding
some finely diced red and green peppers for taste and color. Yummy!!
