Yankee Tuna Salad
Here is a recipe we got from our friends in the
States. I'll christen it: Yankee Tuna Salad, which is excellent as a filling for
baked potatoes or fresh bread or a salad for a party, or with a green salad.
Would be nice with your Potato Pancakes with green beans or broccoli. It is such
a good recipe and so we are never short of a quick meal that we all can eat
within ten odd minutes having picked up some fresh bread. Kids eat it with, what
we call soldiers (toasted bread cut into strips).

Two tins of Tuna (drain and flake same)
Empty above contents into a bowl and mix together. Gherkins
can be substituted with cucumber. Eggs can be left out. Best if eggs are not
boiled too hard. It has lots of bite and flavour and is a scrummy, cheap, fast
meal which can also be mixed with pasta shells for cold summer salad.
